You can always buy her a spa day. Find a nice spa around you then buy her the full treatment massage facial pedicure etc etc. Most women will like that.

shes going to a normal spa not an asian massage parlor!!!!

def. spa. diamonds are overrated and usually just for wives (cough cough). is there something that she has always wanted to try/do?!?! if so see if you could get her a day / some time / pass or w.e. to do it. (ex. shes always wanted to skydive get her a chute and a day pass, thats just an example to clarify what i mean)...
 
oh! sky diving would be fun! or take her out on a little plane.. or flying lessons.
